Next year, there will be a whole new way to eat bibimbap, a mix of rice and vegetables that is gaining popularity worldwide as Korea’s signature dish. In its traditional form, bibimbap is served in a bowl and consists of rice, vegetables, sliced meat, an egg and chilli pepper paste. But in a modern twist, the dish will take on new forms that will be easier to take on the go.The city of Jeonju in North Jeolla Province, which is famous for its version of bibimbap, unveiled 15 kinds of takeout bibimbap on Tuesday. The bibimbap kebab turns the dish on its head with a skewer of rice, vegetables and boiled egg.
Another version borrows the concept of the fish-shaped bungeoppang, but replaces the usual red bean filling with a pocket of bibimbap. This baguette also has bibimbap inside. Special sauces were also created to better suit foreign taste buds.Interview : Lee Bo-young, Research Fellow Jeonju Biomaterials Institute “Foreigners don’t tend to like traditional Korean sauces like soybean paste or chilli pepper paste. So we’ve developed special sauces with ingredients such as yogurt or tomatoes”.These portable versions of bibimbap are expected to contribute to the globalization of the dish, according to an official from the Bibimbap Globalization Federation.Interview : Won Song, Professor Michigan State University “Bibimbap can easily be tailored to suit a person’s religion, diet or culture. I’m glad that the range of selections has expanded”.The Bibimbap Globalization Federation and the Jeonju Biomaterials Institute,.. which worked with the city of Jeonju to develop these products, plan to start selling the products early next year.Heo Seung-ha, Arirang News.
